Bran biscuits

INGREDIENTS:

1 cup nutty wheat flour 1 cup cake flour

2 cups crushed wholewheat or bran flakes 1 tsp bicarbonate of soda A pinch salt 180g margarine, softened 1 cup sugar 2 large eggs 1 cup dried fruit INSTRUCTIONS: 1. Preheat the oven to 180°C. Line a baking tray with baking paper. Set aside. 2. Mix nutty wheat and cake flour, crushed bran flakes, bicarbonate of soda and salt together and set aside. 3. Cream together the margarine and sugar until light and beat in the eggs one at a time. Combine the egg mixture with the flour mixture and stir. Add in the dried fruit and mix well. 4. Place spoonfuls of the mixture on the baking tray. Leave some space between the biscuits to allow them to rise. 5. Bake the biscuits for 15 to 20 minutes until dry, set and golden brown. 6. Allow to cool on a wire rack and store in an airtight container.
