Baby spinach, chick pea, tomato and green pepper salad

Baby spinach, chick pea, tomato and green pepper salad (Serves 4)

3 cups baby spinach 1½ cup cocktail tomatoes ½ cup chopped green pepper 1 can drained chickpeas (or 1 cup cooked & cooled chick peas) 20ml olive oil Mixed herbs to flavour

Mix all the ingredients together and serve as a light lunch or as a side dish.
