Chicken Mango stir fry


4 servings

Ingredients

4 skinless chicken breasts, cut into bite-sized pieces 1 tsp canola oil 1 onion, peeled and chopped 1 green pepper, chopped (red or yellow can also be used) 1 cup snap peas 1 mango, peeled and cubed 2 cloves garlic (or 2 tsp crushed garlic powder) 1 Tbsp vinegar ½ tsp cayenne pepper Salt to taste

Optional For extra flavour, these can be added: Mango chutney (¼ to 1/3 cup) 2tsp fresh, grated ginger

Serve with brown rice, whole wheat pasta or whole wheat couscous for a balanced meal.

Method

  1. Fry onion and green pepper in canola oil till soft.

  2. Add chicken pieces and fry till cooked (about 5 minutes).

  3. Add snap peas and mango

  4. Add seasoning

  5. Serve hot

For an alternative the stir fry can be used as a filling with whole wheat wraps or tortillas.
