Potato & Radish Salad

Recipe Serves 12

750g potatoes, cubed OR baby potatoes, cubed 75ml buttermilk 2 Tbs light mayonnaise 1 Tbs Dijon mustard (or other mustard) 1 Tbs white wine vinegar ½ tsp caster sugar 100g slices radish 1 Tbs poppy seeds

  1. Pour a pan of water, add salt and put the potatoes in the water.

  2. Bring the potatoes to a boil and simmer for 12 minutes until cooled down

  3. Whist the buttermilk, mayonnaise, vinegar, mustard and caster sugar with seasoning well.

  4. One potato is cooked down, add the buttermilk mix, poppy seeds and radishes.
